Why is the sugar content so high in the chocolate version compared to the Banana/Vanilla where as the carbohydrate content is similar?

it's about the taste
cocoa is quite bitter, to make it palatable to most people dextrose (aka glucose) is used to sweeten as well as provide carbs
maltodextrin isn't a sugar, but it is just chains of glucose molecules, the longer the chain the less sweet it tastes
it is metabolised almost as fast as glucose, because as you digest it, the chains are broken down to produce glucose
so maltodextrin is used where the metabolic impact of glucose is intended but without the sweet taste
